First off…May the 4th be with you! You know I couldn’t resist!

Wow! Time sure does fly by! Today, May 4, is my 4-year Blogiversary (Blog Anniversary)! It seems like yesterday I was sitting on my couch writing my first post not having a clue where my blog would be in four years. So many experiences, many of them still in my queue lol (don’t worry they are coming)! Over the past year, I have had the opportunity to meet, connect, and network with some pretty amazing readers, bloggers, and people (online and in for real-life) who just make this world a fun place to be in. I appreciate you all for showing my blog and me so much love and support. With this new year, I will be embarking on a journey and I’m excited and grateful for the opportunity to share it with you all (even the HALF-craziness lol). LOTS of running, fitness…and oh yes, lots of food and foodie finds—and of course, so much more!

Eat Drink Birmingham!

Some things are just worth the wait! Well, I couldn’t wait to share with you all about Eat Drink Birmingham, an event that was held at Soho’s Rosewood Hall in Homewood (AL). If you saw #EatDrinkBham float across your social feed and wanted to know what it was all about, I’m going to share all about it. Eat Drink Birmingham brought a unique pairing experience with food from local restaurants and craft beer from Alabama breweries! I also loved that Red Diamond was there and offered delicious non-alcoholic tea for us to enjoy. The Strawberry-Peach tea was my absolute favorite!

Everything was amazing! I loved sampling some of the best of Birmingham Eats. It’s no secret that I’m a foodie, but craft beer is an area that I have gravitated to only in the past year. Beer is a favorite among the running community for many. I have found that most post-race parties (celebration after a race) offer beer as a beverage of choice and it is very refreshing after a race/run. I have really grown to enjoy it over the past few years, which is why I’m excited that I found many new pairings at Eat Drink Birmingham. There were so many amazing dishes, I will be sharing with you a few of my favorites!

Ocean/26 serving up something pretty tasty!


Let’s Eat Drink Birmingham!

Avo—Chicken Mole Tacos paired with The Brew Stooges Chocolate Knucklehead Porter. This was my favorite pairing of the evening! They really brought out the flavors in one another. True love!


Homewood Gourmet—Crawfish Tasso Pasta: penne pasta with crawfish, tasso, and vegetables in a deliciously smokey cream sauce. Perfectly paired with Straight to Ale’s Monkeynaut IPA!

This was my favorite dish and it’s perfect for any seafood lover! Being a runner, carb loading is necessary before a big race. I love that I can find one of the best pasta dishes right here in my city. This specific dish is not on the regular menu, but they will be happy to prepare it upon request.

Jo Jo’s on Broadway-–Smoked Pork with Three-Pepper Chutney and a Mango Sauce paired with Back Forty Beer Company’s Paw Paw’s Peach Wheat.

The peppered pork was so yummy and the mango chutney was the perfect sweetness to add to the punch of the pork. The notes in this peach beer created a beautiful blend as it “tango’d with the mango”! I would say that this beer is great for those who are craft beer newbies.

Bellini’s—Filet Fricassee with roasted corn, fingerling potatoes, and Gorgonzola with a balsamic glaze. Amazing! This dish was paired with Fairhope Brewing Co. Cause Way IPA. Bellini’s also had samples of their white chocolate bread pudding. HEAVEN!

The J. Clyde—Fatso Pudding (paired with Good People Brewing Co.’s El Gordo)

Somebody call the law! This Fatso Pudding should be against EVERY law! Oh my word…this creamy, chocolaty goodness is absolutely divine! It is an Imperial Stout pudding made with chocolate morsels, local honey, and vanilla wafers (served with vanilla bean ice cream).

What do you do when you see a pool of parsnips? You take a dive and dig in! Okay, well maybe not at an event like #EatDrinkBham, but I was excited to sample them. They are so good! I loved them so much, I tried out a new Baked Parsnips Chips recipe found here. Back to these yumtastic little ‘snips…

DG’s Family Restaurant (and Catering)—Parsnip Bisque with Honey Crisp Apple paired with Rocket Republic Brewing Company’s Terrestri-Ale Tripel. I love bisque! The Tripel takes the flavors to a whole new realm by heightening the flavors and bringing out the sweet and savory notes of the Parsnip Apple Bisque!

Fun Fact: The Bright Star is Alabama’s oldest family owned restaurant. It was also my Dad’s favorite and I have seriously been going there since I was a little girl. If you visit, make sure you try their Fried Snapper Throats. Delish!

I love blogging and it has become a great outlet for me. When I started my blog, I knew it would be hard to be placed in a box. Trust me, I tried. I quickly realized that I march to my own beat–which led to my transition. My bio tells quite a bit about me and from time to time I’ll post about those things (i.e., hair, books, vintage/random finds, thrifting, etc.). But then I saw something that reaffirmed everything…


My blogger friend Blitz and Glam posted a textgram on her blog post, “Blog What You Live”, that said “Blog what you live, don’t live to blog.” This thought has been whirling in my mind as new ideas bring new inspiration. Each year my style, voice, or ideas may change. Not necessarily in that order–but it happens.  Two things about me that are evident:  I run and I love to try new recipes. I am very much inspired by health, fitness, and Oh YES! — good food, but I look forward to blogging more of what I live. I think that’s what makes this journey worthwhile. I’m really excited about what is to come!

Thanksgiving Rewind: Sick and Shut In Edition

I hope everyone had a Happy Thanksgiving! You’ve probably noticed I haven’t posted in a minute…I’ve been sick and shut in. I’m feeling much better now…thank God! I was quarantined last night*side eye* lol but I guess it helped!

I enjoyed the holiday with my family and ate pretty good, but I almost feel like I need to redo Thanksgiving dinner, because I couldn’t indulge like my normal self. Everyone else did eat good!

imageI made a few sweet potato pies! This is the before pic. Sorry there’s no after they got demolished! lol I also made a Butter Pecan cake…Mmmm mmmm!


Oh and my Dressing was OTDC! Yes it was that good! Of course this wasn’t all…we had the works! And my Mom’s Macaroni and cheese was heavenly!

imageWent by Earth Fare to look for E-Boost, but they only had Emergen-C! Gave em’ a try, didn’t really see a difference probably, because my cold got too for along.

imageI cheered for the Alabama Crimson Tide (from the couch)! It was still good times all around.

I’m super excited about the Christmas holiday season I can’t wait to see what Santa brings! ;-)


Melt In Your Mouth Monday | Eggplant Parmigiana

I had eggplant for the very first time a few weekends ago and couldn’t believe how much I enjoyed it. It was like love at first taste! That day, I said I was going to find a really tasty recipe and make it for myself. I knew it was meant to be when Weight Watchers dropped an Eggplant Parmigiana recipe in my inbox. One thing about Weight Watchers is they always have tasty recipes. They show you how to still enjoy the things you love and eat healthier.

I decided to make it for me & my Hubby this past weekend! And let me just say…by the time I made it back home from a night out with my girlfriends, it was a huge chunk missing in the dish! So yes…he loved it!!!

20120123-150756.jpgI decided that 1/2 inch thick was a little thicker for my liking so I thinned them out a bit. But if you love eggplant…go for it!

20120123-150814.jpgI used over 1 and a 1/2 eggplant (using more bread crumbs) and I added more cheese since it was going to be for more than just me. I also wanted to eat off of it a few days.

Did I mention that the eggplant was even more delicious the next day!? After the seasoning from the bread crumbs sat up and got all intertwined…OMG! I added a side of whole wheat linguine with tomato/marinara sauce and we had ourselves a tasty meal! My Mom wanted to try it so I took her a little baggy with some eggplant parmie patties so she could try it! She loved it too!
