Kale & Turkey Sausage Breakfast Pizza

- 2-3 serving of Egg Whites or Egg Beaters
- 2 cups/handfuls of Kale
- 1/3 cup of 2% Mozzarella Cheese
- 1/2 cup of ground turkey crumbles
- 1 tbsp of extra virgin olive oil
- Mrs. Dash
- Parmesan cheese
Prepare turkey crumbles. (You can find these in the refrigerated section by Jimmy Dean). Set aside.
Sauté kale in olive oil. Sprinkle a few shakes of Mrs. Dash and cook for about 1 minute (or your desired texture). Set aside.
Pour egg whites/egg beaters in skillet and let them set up. When eggs have cooked 2/3 of the way you can either flip the “eggs” or let them continue to cook. I just did the latter — much easier.
Sprinkle a few shakes of Parmesan cheese. Add kale, ground turkey crumbles, then top with reduced-fat mozzarella cheese and diced tomatoes (I like Roma!)
